It's no use skimming over the details... Sometimes precision matters!

If you've ever tried to skim the foam from a pot of stock with an ordinary spoon, you'll know that it's surprisingly easy to scoop up too much perfectly good broth at the same time. The Japanese akutori ami spoon is designed to do the job much more precisely.

Its fine stainless steel mesh catches scum, foam and other tiny particles from the surface of soup, stock and sauces, while allowing the liquid to drain back into the pan. 

It's particularly useful when you want a beautifully clear broth or sauce without throwing away more of the cooking liquid than necessary.

Looking a little like a small ladle, this long-handled mesh spoon is also handy for removing debris from cooking oil or for lifting delicate foods such as poached eggs or fish from a pan while letting the liquid drain away.

Rather than wielding a large skimmer, the compact size of this version is especially useful when working in a smaller saucepan or to target a particular spot in the pan.  It's a specialised Japanese kitchen utensil that makes perfect sense once you've used it!

The long handle features a lovely tsuchime hammered finish, giving traditional character to this otherwise highly practical utensil, while the stainless steel construction makes it sturdy enough for everyday cooking.

All in all, we have here a beautifully precise tool for making clear soups, refined sauces and perfectly presented dishes.

The spoon handle measures about 14cm (5½") long and about 1.3cm (½") across at the widest part.  

The fine mesh bowl measures approximately 6.3cm by 5.4cm (2½" x 2⅛") with a depth of about 1.5cm (just over ½").
